Maybe a silly idea, but why not a Gauntlet mod for Zandronum, perhaps with randomized dungeons and loot (if possible)? You know, Gauntlet is that marvelous Arcade game also seen in a variety of consoles and even portables.
And an interesting idea for anyone making a coop game with multiple maps interconnected: when someone attempts to trigger the Exit to another area, have it create a prompt in everyone's screen counting from 5. During that time, if one (or perhaps over 50% of the in-game players) presses to vote "no", the map transition is canceled and can only be retried after ten seconds.

Another silly idea, probably not suited to the sprite-based Doom engine, but I'm tempted to share:
Most players are tiny bugs, some can fly. A couple of players are life-sized exterminators. Exterminators are equipped with bug spray and have limited ammo. When ammo is exhausted, bugs win.

Gamevoin, if you suggest a Prince of Persia-like mod, then Im sure I can create some swordsman monsters for it - if you want. I have tried to create a Prince of Persia mod two times before so I have some resources for that already.

Rock Band: Keyboard. I know this sounds reidiculous, but I had the idea in mind for quite a while. If I or anyone becomes successful in developing this "mod", then it will be the first music doom "mod".
How is this going to work? Within Slade KEYCONF, I will have the keys "A" through "L" set to default for the mod. Then with the key is pressed, it will "puke" a script raising the floor a few feet, corresponding with the key you pressed. Possibly an Imp fire ball will come down a row and when it gets close, you press the corresponding key to hit the note. Simple as that. If you have played Guitar Hero or Rock Band, you'll get the idea. Missing a note will cause the music to be slightly quiet.

That's what I have been thinking before I went to sleep. Pressing a note too early or too late or wrong notes will cause your "Rock Meter" (Floor for now: experimental) to fall, once it reaches to the bottom, you loose. So spamming keys can't save you.
