1) I'd like to assign keys to change the map via the console command, e.g f1-f12 for first 12 maps, but use a macro for the next lot, e.g shift + f1-f12. Can you bind to macros in the console, or would I need to use ordinary macro software?
2) is there any way to fly around the map with clipping, zdaemon style?

while u can easily bind a single map to a key, for example:
bind f1 "map map01"
using keys as modifiers is a can of worms:

In zdaemon you can walk through doors but clipping is still in effect for walls (This is while spectating). I tried to find the visual/walkthrough mode on gz builder but can't find it.
